= What are aromatic herbs ? =
Aromatic herbs are leafy plants used to flavour and season food. They generally come from the fresh or dried leaves of herbaceous plants, often cultivated for their aromatic properties. Among the most commonly used aromatic herbs are basil, rosemary, thyme, coriander, mint, parsley, chives and many others.

= Where and when are herbs harvested ? =
Aromatic herbs are generally undemanding in terms of soil and growing conditions, but most prefer well-drained, sunny soil.
The harvesting period for aromatic herbs varies according to plant and region, but they are often at their best just before flowering, when their essential oils are most concentrated.
Some herbs, such as parsley and chives, can be harvested all year round, while others, such as basil and rosemary, are more sensitive to the cold and may have a more limited growing season.
