Butternut squash and coral lentil soup

Looking for a light and colorful meal ? This recipe is for you, with butternut !

Peel and slice a yellow onion, and fry it in a pan with a tablespoon of olive oil.
Wash, peel and dice 500g of butternut squash and add to the pan.
Rinse 150g of coral lentils, put them in the pan with a stock cube and 500mL of water.
Simmer covered for 30 minutes and blend until the desired consistency is obtained.
