Fruiting vegetables

= What are fruiting vegetables ? =

Fruiting vegetables are a special category of vegetable, distinguished by their unique nature. As their name suggests, they are fruits. They are the product of flowers, trees, shrubs or herbaceous plants and contain seeds. These fruits are called vegetables because they are eaten as such, in savoury dishes and recipes. They are generally fleshy and rich in water.

Fruiting vegetables include common foods such as tomatoes, zucchinis, eggplants, cucumbers and, of course, peppers.

= Focus on bell pepper =

The bell pepper is one of the most popular vegetable fruits, particularly for its variety of colours (red, green, yellow, orange) and its many uses in cooking. Native to Central and South America, peppers belong to the Solanaceae family, like tomatoes and aubergines.

Bell peppers are rich in vitamin C, even more than oranges, and they also contain vitamins A, B6 and E, as well as antioxidants that are beneficial to health. Their flavour varies according to ripeness: green peppers are generally more bitter, while red, yellow and orange peppers are sweeter and milder.

Bell peppers are extremely versatile in the kitchen. They can be eaten raw, grilled, roasted, stuffed, or added to sauces, salads or simmered dishes. Each colour of pepper adds a unique touch of flavour and colour, making them a popular ingredient for brightening up dishes.

= When are fruiting vegetables harvested ? =

Fruiting vegetables are mainly summer and autumn fruits. However, harvest times may vary slightly depending on climatic conditions, specific varieties and local growing practices.

Bell peppers, for example, are generally harvested from July to October, when the fruit has reached full size and colour. It’s important to harvest peppers at the right time to ensure that they have developed their full flavour. Green peppers are in fact unripe peppers, harvested before they change colour. If left on the plant for longer, they can turn red, yellow or orange, depending on the variety, and become sweeter.

The first aubergine harvests begin in May and continue until September. June is the season for tomatoes, peppers, courgettes and cucumbers. These can be harvested until September-October. Finally, the ideal months for pumpkins and butternut squash are September, October and November.
